Fix docker override backend url

Update: Remove hardcoded VITE_DEV_BACKEND_URL from Docker Compose

Rather than just fixing the URL, we should remove VITE_DEV_BACKEND_URL from the Docker Compose environment: blocks entirely and let client/.env be the source of truth.

Why

• Docker Compose environment: variables set process.env inside the container, which overrides anything in client/.env (Vite gives process.env highest priority over .env files).
• This means developers can't switch backends (e.g. staging, review apps, local) by editing client/.env — the compose hardcoded value always wins.

What to change

1. docker-compose.yaml — remove VITE_DEV_BACKEND_URL=http://server:8000 from the client service environment: block.
2. docker-compose.override.yml — same, remove it.
3. docker-compose.traefik.yml — keep VITE_DEV_BACKEND_URL=http://${PROJECT}-server:8000 as-is, since Traefik uses project-scoped container names that can't come from a .env file.

How it works after the change

• vite.config.ts already has the fallback:

  const backendUrl = env.VITE_DEV_BACKEND_URL || 'http://server:8000'

• Docker (default): No env var from compose → Vite reads client/.env → if unset, falls back to http://server:8000 ✅
• Docker (Traefik): Compose sets the project-scoped URL → overrides correctly ✅
• Local dev (no Docker): Vite reads client/.env directly ✅
• Custom backend: Developer uncomments a line in client/.env and it actually takes effect ✅
