Summary
Update valkey-glide from 2.3.0-rc2 to 2.3.1 (or 2.4.0 if available). Since 2.3.1 now includes a fat JAR, the dependency management in the POM files and doc files can also be simplified.
Should also set the library name in the connection metadata to be GlideSpringDataValkey to match existing GLIDE conventions.
