bug: use multiple crd vllmrouter in the same namespace

Pod's names pod-viewer-role and pod-viewer-binding are hardcoded so we cannot have more than 1 vllmrouter in the same namespace.

To Reproduce

Try to deploy 2 crd vllmrouter in the same namespace for 2 differents models.
