Adds Discord to the docs header, footer, and VitePress `socialLinks`.
Fixes pre-existing quote style violations in the 3 affected docs files
to comply with the project's `singleQuote: true` formatter config.
## Changes
- **`docs/.vitepress/config.mts`** — added `{ icon: 'discord', link:
'https://discord.gg/cC6TEVFKSx' }` to `socialLinks`; fixed double →
single quotes throughout JS strings
- **`docs/.vitepress/theme/components/Header.vue`** — added Discord icon
link alongside X/Bluesky; fixed JS string quotes
- **`docs/.vitepress/theme/components/Footer.vue`** — added Discord
`<li>` entry in the socials list; fixed JS import quotes
