I couldn't find anything on https://voxpupuli.org/docs/ for how to configure tests, especially acceptance tests, on a module. I see how to run them but not how to get them set up.

have you checked the README.md at https://github.com/voxpupuli/voxpupuli-acceptance ? that's our entry point into acceptance testing. The gem configures all the required dependencies.
