Edge2edge insets ignore dark-mode settings

What happened?

Insets seem to work but the theming appears to be buggy:

In order to reproduce in the playground app - remove this native styling property:

react-native-navigation/playground/android/app/src/main/res/values/styles.xml

Following deeper research, seems this won't be an easy fix. There'd still be issues around modals and maybe other use cases (potential one here) where screen content would still render under the navigation bar:

I will leave this issue as an item to revisit while working on complete edge-to-edge compat (#7978).
