We are deploying to our WunderGraph organization and we are running into naming collisions. We are renaming the subgraphs when publishing just for our use-case.

Adds documentation and a script to deploy sample router to Fly. The router is set up
to use gRPC plugins which are in this repository.
Our use-case is internal use to ensure the onboarding setup works against real
deployed router.
