chore: update LICENSE to MIT and add license field to package.json

- Replace unprofessional LICENSE with standard MIT License
- MIT is more appropriate for a VSCode extension tool
- Add license field to package.json for package metadata
- MIT is permissive and compatible with EGE LGPL 2.1 library
