Structured JSON logging and color output option for CLI

Add support for structured JSON log output in the CLI. Also add an option to disable colorized logs.

i noticed that pgstream uses zerolog which is all about structured logging, yet in our logs everything is text and full of colors. We run this on cloud in in gcp.

The logger is currently hardcoded to use zerolog.ConsoleWriter (colorized text output) in internal/log/zerolog/zerolog.go, with no option to switch to structured JSON output. The only configurable logging option is the log level via PGSTREAM_LOG_LEVEL env var or --log-level CLI flag [1].

To get structured JSON logs (which is zerolog's default behavior), the ConsoleWriter wrapper would need to be removed or made optional. The relevant code is in the New() function in internal/log/zerolog/zerolog.go — the Config struct currently only has a LogLevel field and would need something like a LogFormat field to toggle between "json" and "console" [2].
